Wealthy members dined on steaks, baked potatoes, wine and beer, a menu that would delight their counterparts today. It was such a national trait that the guards at the Tower of London were nicknamed the beefeaters and a French slang word for Englishmen was “rosbif.”
Still, the place we associate with big steaks is the USA and the era is not the 1750s but the 1950s. It was an era of cool music, strong cocktails, big steaks, and big dreams. Even people who weren’t born yet can get nostalgic for the era of optimism and opulence.
The place to do that today is The Arthur J. It’s mid-century visually and the kitchen serves up dishes in that spirit, but made attractive to a contemporary palate.
The restaurant is an homage by the Simms brothers to their late grandfather Arthur J. Simms, who was a restaurateur and whose portrait hangs by the front podium. The grandfather is also oddly but touchingly remembered with a pair of battered golf shoes by the front door.
Executive chef David LeFevre taps into nostalgic and historic veins both with what is served and how it’s presented. Some very modern items are served in the blue-flowered Corningware baking dishes that were in every kitchen when Eisenhower was president. These and other touches show a genuine affection for what’s going on here.
The menu is heavy on steaks, naturally, but there is much more here. I have visited The Arthur J twice — once with someone who is a connoisseur of cow, the second time with someone who hadn’t eaten beef for decades and both visits were successful. Both times we were served by a cheerful pro named Rachel who was an excellent guide to the subtleties of the menu.
The starters are mostly classics. We tried an emmental popover, split pea soup, Hamachi tartare and a grilled Treviso salad. The popover and soup were on different visits, but I wish I had ordered them together because they would complement each other well. The very light, savory roll with funky cheese filling would have been great with the soup, which had a slight peppery tang and extra flavor from rye croutons and the chunks of Virginia ham. A note to those who haven’t had it before: Virginia ham is saltier and chewier than most other hams, so adjust your expectations when you bite into one of those nuggets of meat in the soup. luding it in this soup adds a rare flavor of Colonial America in a California beach town. The only modern element was the garnish of smoked chicharrones, which added a rich crunch to the mix.
The flavor of the Hamachi was another coast and another century; marinated chopped yellowtail with micro-greens, tomato, radish slices, cucumber, Thai chili, peaches, and peanuts. A puffed rice chip with sesame on the side adds an additional texture, if one is needed. Those items don’t sound like they should work together but they do. There’s a slightly different balance in every bite.
We wavered between a classic Caesar and the Treviso salad, but decided on the latter because we were intrigued by the combination of bitter lettuce with ricotta cheese, mission figs and pine nuts with a sherry vinaigrette. It was interesting but not entirely successful. Our server had mentioned that the Treviso had been marinated and seared, both of which usually diminish the bitterness of this heirloom lettuce variety, but it still had a rather sharp flavor in bites that didn’t include the cheese. Using the velvety, aged ricotta rather than the usual parmesan was an inspired move, but I would have preferred more of it, and that it be cut in smaller pieces so it was spread through the dish more evenly. The idea of bitter radicchio with figs and cheese was excellent, but at least that day the balance was a bit off.
Unusual variations on classic cocktails are offered, under inexplicable names. A sidecar is renamed “Gromit’s whip,” a blood and sand “Ultimate Degradation.” The fact that they have any variation of blood and sand is near miraculous —
it’s a mix of scotch whisky, vermouth, cherry liqueur and orange juice that was invented in the 1920s and is unjustly obscure. If you have ever enjoyed good cocktails, you must try them here. The booze is top shelf and the people behind the bar are masters of their craft.
Wine is better with dinner, of course, so we asked the sommelier to suggest something. He suggested Champagne with the split pea soup and a white Montrachet with the salad.The pairings were spot on. I’m going to want sparkling wine with pea soup from now on.
The main courses here are served on an a la carte basis, though you wouldn’t know that from the menu. The vegetables and starches that are mentioned on the same line as the chops and seafood are mere garnishes. On the visit with the carnivore we ordered a ribeye and the sea bream, on the second visit rack of lamb and a pork chop. (I had been attracted by an artichoke and cheese dish that someone at an adjacent table was eating with gusto, but couldn’t resist the pork.) The meats followed a simple formula: top quality product minimally seasoned and expertly cooked. The pork is from a rare crossbreed of Hungarian and English breeds, the meat darker, sweeter and more richly flavored than even most heritage breeds and the Colorado lamb will make you forget that bland stuff from the antipodes.
The sea bream was less exotic, but used an interesting, modern preparation. It had been dusted with fennel pollen, which lends a delightfully sweet, spicy scent. Bream is similar to bass but is more sustainable. The moist, rich fish came away from the bone easily. Scottish salmon and lobster are also offered and based on this meal I’d like to explore their other seafood options.
As for the steaks, the item that is the centerpiece for most meals here, both prime dry-aged beef and wet-aged Angus beef are available. Supermarket beef is wet-aged and not for very long. It has an agreeable, mild flavor. Dry aging intensifies the flavor and adds a funky richness that is generally associated with lamb and game meats. Dry-aged steaks are also more expensive because they lose volume in the process. We decided on the dry-aged ribeye and after dithering over the 13 sauces and eight toppings to choose from, decided to have none. We wanted to experience the meat by itself. It was a superlative steak, and as we ate it we mused that The Arthur J is missing a bet. They should offer small portions of both wet and dry aged steak so that customers could learn the difference. Offhand, I think that they’d sell more of the dry-aged to repeat customers because they will have a basis for comparison.
A variety of sides was offered and these change with the seasons. A terrific fava bean dish that I enjoyed on the first visit was gone on the second, replaced by acorn squash with candied pecans. The mustard spaetzle was gone too, though I know of no reason German handmade noodles would be seasonal. Perhaps they weren’t popular because nobody knew what they were.
A steakhouse favorite that seems to have a perennial place on the menu is creamed spinach. The version here is the classic — cooked down with real cream and topped with crisp fried onions.
Desserts were offered, but here the menu is out of balance. With the exception of some sherbets, everything was heavy and rich. Had something light like a fruit tart or other, similar pastry been offered we would have ordered it, but on both visits we didn’t see anything that called to us.
Dinner at The Arthur J is on the high side by local standards. The less expensive of the two meals ran just over $250 for two, with two cocktails and four glasses of wine. That could have been much less if we had watched the wine budget. One the sommelier suggested was almost $25 for a three-ounce pour. It was a splendid pairing, but there were other good ones at more modest prices.
The Arthur J is a temple to a certain kind of dining, the mid-century modern décor in harmony with the ideas on the menu. At their best both are about simple ideas elegantly executed. In one case it’s wood polished and sculpted to show its beauty, in the other dishes crafted to show off minimally enhanced, excellent ingredients. One could only wish that the patriarch of the family could have lived to see it.

4 1 Steven Hull a puppet show A rotating stage displays Hull s sculptures of conquistadors whose hands detach and become marionettes. There will be performances at 8, 9, and 10pm featuring puppeteers Alex Evans and Eric de la Cruz with music by Anna Huff and Tanya Haden. The sculptures will be accompanied by light works by Marilyn Lowey and a sound piece by Gibby Haynes. 2 Janet Echelman The Space Between Us Echelman s multi-sensory immersive experience invites visitors to recline in sculpted sand forms as a diaphanous, 200 aerial sculpture billows above. The work explores the tension between weight and lightness between our earth-bound bodies and our desire to float. Developed in collaboration with the OLIN Studio for Landscape Architecture and Daniel RomeZach Alterman Audio Art. An audio component for this artwork is available at 3 Glenn Kaino well The wishing well of all wishing wells comes to Glow in a translucent container of bioluminescent wonder. This rare liquid was especially harvested for Glow from plankton at the Scripps Institute of Oceanography at UCSD in La Jolla. 4 Steve Boyer Colorfields A custom app prompts color changes on iphoneandroid devices as visitors move within the Colorfields zone, a 10,000 square foot area on the beach (location 4a), while a dynamic projected map provides an overview of all users within Glow (location 4b). 5 8 Patrick Scott The Rest Is Noise: A Carousel Ride through the 20th Century Ride the historic Santa Monica Carousel as 16 speakers play 12 second clips of music, representative of each decade of the 20th century. One hundred years of music condensed into a five minute experience. The Pacific Wheel, the world s largest solar Ferris wheel, becomes the ultimate revolving mandala. Experience it as sounds become colors and as the many become one. 10 Shana Koenig Solar Sea Sculptures Spread amongst two locations, floating luminescent forms, reminiscent of those found in the depths of the ocean, respond to and interact with Glow s audience. 11 Rebeca Méndez CircumSolar, Migration 1, 2013 A giant disk of projected, powerful natural images near the shore features the arctic tern, a small sea bird that has the longest migration of all living beings on earth, flying from the Arctic to the Antarctic and back again each year. 14 Jedediah Caesar More Currency for Micronations A treasure hunt worth joining! Caesar will distribute over three thousand small objects that reference coins in easily discovered locations throughout Glow (excluding the sand). The supply will be refreshed several times throughout the night. To say that 2015 has been a banner year for L.A. restaurants would perhaps be a lie — there have been fewer major attention-grabbing openings this year than in years past. And yet, as I look over the places that have seized my attention in these last 12 months, I see an L.A. scene emerging that is more true to the soul of this city than in any other year. We’ve gained so many weirder, smaller, less Eurocentric restaurants this year.
As you read my top 10 picks, you might notice the prevalence of Asian and Mexican spots, which take up more than half of this list. We’ve always said we’re a city that isn’t bound by the European sensibilities that dominate on the East Coast, and this year that’s become obvious not just in a few exciting openings but in the majority of them.
So how do we define a banner year? Perhaps growing into our true selves as a dining city qualifies after all.

10. Everson Royce BarWhat do you get when you take one of the city’s most passionate wine purveyors and a James Beard Award–winning chef and have them open a bar together? You get Everson Royce Bar, the Arts District drinking hole conceived by Randy Clement of Silverlake Wine and Matt Molina, previously chef at a little place you may have heard of called Osteria Mozza. In many ways ERB is a fairly simple operation: long, backlit bar facing some banquette seating; a large kitchen abutting a hallway to the outdoor space; a huge, string light–festooned back patio with picnic tables and a bocce court; a short menu of classic drinking food from all over the world. Molina’s food is hardly groundbreaking here — there are no cheffy twists on dishes, just familiar bar snacks perfectly realized. But somehow, those elements — together with beverage director Chris Ojeda’s fantastic cocktails — make for the neighborhood bar of your dreams. 9. The Arthur JIt's hard to resist the charms of the Arthur J, David Lefevre's new Manhattan Beach restaurant. If a steakhouse is all about a projection of American fantasy, then the Arthur J spins that fantasy particularly well. The restaurant's decor is an imagining of the glossy swagger of the 1950s, all geometrically latticed room dividers made from honey-toned wood, tastefully space-age light fixtures, and carpets and upholstering that have the gray and navy chromatism of a well-made suit. Cocktails provide clever twists on the classics, and those "twists," along with the forward-thinking wine list, are really the only details of the restaurant that veer toward modernity. The food is almost all throwback, down to a pot roast served from white Pyrex with a blue curlicued design, a vessel that typically wouldn't be seen in an upscale steakhouse but that graced the kitchens of most housewives circa 1959. Are the steaks cooked well? Do they deliver that meaty tang, that carnivorous joy, the char and blood and gratifying balance between tender and toothsome? They are and they do, particularly the dry-aged prime, which comes in a variety of very expensive cuts. 8. Trois FamiliaWhat will spring forth next from the minds of Ludo Lefebvre, Jon Shook and Vinny Dotolo? The trio, now with a trio of “Trois” restaurants, has followed up Trois Mec and Petit Trois with Trois Familia, a funky little spot in a Silver Lake strip mall that is part French, part Mexican and 100 percent hipster fantasy. And what a fun fantasy. The restaurant, which is open for breakfast and brunch daily and has no liquor license, would fall under the weight of its own silliness if not for the quality of the cooking, which is fantastic. You put your name on a list out front and wait to be called to a communal picnic table, there to dine on dishes such as “hash brown chilaquiles,” which means hash browns in a pool of hot sauce with an egg on top, or a garlic butter and bean burrito that is as delicious as it is fundamentally whacked. There’s a lot of that here — Frankenstein dishes that should be terrible, and would be terrible if it weren’t for the cooks in charge. 7. Rocio’s Mexican KitchenRocio's Mexican Kitchen is a modest affair. The small wedge of a building from renowned mole queen Rocio Camacho operates mainly as a takeout place where you order at a counter, and it's possible to pick up a burrito and never get wind of the more exciting possibilities of eating here. But there’s way more to this place than meets the eye. It wouldn't be a Camacho restaurant without a focus on moles, and the Oaxaqueño, in particular, is fantastically silky and has a depth of flavor that's downright profound — this is mole that might be cast in the starring role of some magical-realism novel, the dark sorcery used to seduce a young lover. Camacho's touch with more standard menu items makes them utterly memorable. The empanadas are so light and crispy they're almost ethereal in their shattery crunch. The aguachile has fat shrimp bathed in a scarlet sauce spicy enough to alter your consciousness but also so tangy and balanced that it will have you coming back for bite after excruciating bite. If this food were served in some fancy room somewhere, the salmon would be cooked a little more gently; the ribs under a sticky, spicy, aromatic glaze would perhaps be more tender. There would be wine as delicate as the flavor of the musky huitlacoche sauce you get ladled over mahi mahi. But the wonderful thing about Rocio's Mexican Kitchen is right there in the name. 6. RicebarWe use the term “hole in the wall” as a folksy cliche, but Ricebar truly is a hole in the wall, a teeny kitchen with a door on downtown’s Seventh Street. The entire space — kitchen, storage, fridges, dining area — is 275 square feet. The master of those 275 square feet is chef Charles Olalia, an exceedingly friendly dude who often looks kind of happily stunned to find himself here. It is quite amazing to find him here, given that his last job was executive chef at Patina in Walt Disney Concert Hall, one of the ritziest restaurants in California. Before that, he worked at the French Laundry in Napa Valley and Guy Savoy in Las Vegas. At Ricebar, the focus is not on fine dining but rather heirloom, fair-trade Filipino rice bowls in a variety of flavors. The menu is built around the four large steamers in the front window, each holding a different kind of rice. Kalinga Unoy is a rust-colored red rice, grown on ancient terraced fields in Kalinga in the Philippines, then sun-dried. The flavor is lightly nutty and sweet, and it delicately complements Ricebar’s suggested topping, bistek tagalog: tender, pan-seared, soy-marinated beef. There’s black rice covered in hunks of lush avocado, crisp radish, sweet pops of marinated grape tomatoes and tiny, pointy, salty, crunchy fried anchovies. Pork longganisa, a sausage that’s made in-house, comes sliced and accompanied by pickled veggies and has an almost floral and aromatic yet funky flavor that leaves a light, fatty sweetness behind.
